Italian Sausages – ‘Cause I like ’em!

Don’t you just love sausages? I mean, when was the last time someone offered you a sausage and you said “no”? I can’t think of any time. Ever.

The problem with sausages, especially Italian sausages and even more especially, really good Italian sausages, is that they are not exactly budget friendly. They are not outrageous by any means, but I find it a little difficult to squeeze them into the budget often.

That’s why when they are on sale, I go sausage crazy. I will buy 4 or 5 packs of sausages and freeze them and spend the next few weeks dreaming of what kind of sausage-y goodness I can create.

It seems though, that no matter what I dream up, sausages with peppers and onions always comes first. It’s a combination made in heaven. It’s like Peanut Butter and Jelly. It’s like French fries and Frosties. It’s like Sonny and Cher! They just go together really, really well!

And it makes me happy. In a room full of screaming kids, it would make me happy.

So, I give you Italian sausages with peppers and onions and tomatoes ( just to shake it up!)

Italian Sausages with Peppers, Onions, and Tomatoes
1 lb of Italian sausages ( mild or hot)
2 bell peppers, sliced
1 medium onion, sliced
2 cloves of garlic, peeled and crushed
1 tsp. Italian seasoning
2 tomatoes, diced
1 T olive oil
1 cup chicken broth or beer
salt and pepper
Hoagie Buns
Spicy Mustard

Sauté peppers and onions in a skillet over medium heat for 15-20 minutes until softened.

Halfway through, add in garlic and tomatoes, Italian seasoning, salt and pepper. Reduce heat to low when mixture is nice and thick.

Meanwhile, place sausages in a cast iron skillet with chicken broth or beer and simmer, partially covered, until all of the liquid has evaporated.

Brown on all sides. Remove from pan.

Place sausage in a bun ( you could toast them if you wanted) and top with mustard and pepper, onion, and tomato mixture.

Total Cost : $4.18

    I'm with you on that one – sausages are just fabulous. Unfortunately, we can't get those types of sausages here in Turkey so whenever we go back to the UK, we go sausage crazy, too. Your sandwich has just made me crave sausage! 🙂

    great photos – looks tasty! our organic market has chicken sausages that are stuffed with spices and blueberries which is pretty tasty, so i buy those when they're on sale.

    Being Vegetarian, I have said no to sausage! But, I love this po-boy sandwich and I often make it home very similar to your recipe, only I add balsamic vinegar and garlic and no meat! Thanks for sharing.
